For the novice brewer, brewing beer stlye countries (sometimes also called hedges wine) is the easiest way to start making your first beer. After all, people produces beer in this basic way for hundreds or years and the results can sometimes be surprisingly good.

What's even better is that you do not have to go out and buy lots of expensive equipment and complex. You only need a bucket, bottles which can be securely closed or flip-tops were a little yeast, some toast and a large pot.

Country-style beers are usually made from water, a flavoring agent, sugar and yeast. The flavoring agent is typically home to nature (which explains why this style of beer is known as a "hedge beer") and common ingredients include advice dandelion, sloes, elderberries, elderberry flowers, Sea-buckthorn, dandelion and burdock root, wild strawberries, rose hips and more. Basically anything that can be used to infuse the water with a palatable.

Once you've done your infusion, then add the tartaric acid as an acidifier (or you can add oranges and lemons for infusion) and you will add about 500g of sugar or liquid 1l. So it's a matter of allowing everything to cool to body temperature before add yeast. A good example of this type of beer is beer Nettle, whose recipe is given below:

4L water

3 oranges cut into segments (with peel)

3 lemons cut into wedges (unpeeled)

900 g of sugar cubes

Combine the tops of nettles, water, oranges and lemons in a large saucepan. Provide Porter boil and cook for 40 minutes. Remove from heat and strain through a muslin bag.

Return the liquid into a saucepan, bring to boil and boil for 30 minutes then add the sugar. Stir until sugar is dissolved and then take off the heat. The above recipe gives you the basic (and traditional) method of manufacture of this type beer. Just vary the recipe for anything you wish and in two months, you'll be drinking your own home-made sparkling ale.
