Provence. As the weather begins to cool in my part of the world that word brings extra poignancy. While Provence is known for many good things in life great wine is not usually part of the list. But his history of wine checkered does not stop me from trying this bottle produced in the region Puget City, part of the golden triangle of Côtes de Provence. The Sauveuse (the Savior) refers to a local source that is more than welcome in a field which water is often insufficient. So maybe this part of Provence has it all.

Wine Review
Domaine de la Sauveuse Cuvée Carolle Rose 2008 13.0% alcohol about 16.50 $
Let's start by quoting the marketing materials. A producer long term "organic", Domaine de la Sauveuse was also integrating more sustainable agriculture and biodynamic ideas in production techniques. So far, the producer has received organic certification, but their passion for the other two schools of thought is deeply rooted. This rose is full of strawberry and cherry flavors and citrus flavors. A great sipper, it is also a good match for roast pork or grilled chicken breast with fresh herbs. Our quality assurance laboratory has determined that this wine contains 12 mg / L of free sulfur. And now for my review of this wine AOC Côtes de Provence, based on Syrah, Grenache, Cinsault and grapes.
At first sip, the wine is very fruity with soft acidity. And I thought of Provence. The original meal was a vegetarian lasagna Mozzeralla boxed with ricotta cheese and I brushed with grated Parmesan cheese. The wine was sweet with a refreshing acidity. It was round, slightly lemony and quite long.
The second meal consisted of a zucchini and onions stuffed with rice and slightly spicy ground beef on a bed of potato slices. This rose was slight acidity. He stayed gone yet, if you know what I mean. My glass has held many strawberries and a little sun.
The last meal included skin on the grill at home on chicken legs and wings that had been marinated for two days in a Thai barbecue sauce fruity cakes with potatoes and a fresh tomato from the garden style. With wings of rose was clear and acid. With the most delicious thighs wine is light and refreshing but not very tasty. The tomato acid softened the wine a little.
Before tasting this wine with two cheeses I tried to be paired with herring Matjes. The wine was acidic with fresh strawberries. Herring and strawberries in May does not seem to go together, but it was actually a good combo, slightly sweet with soft tannins. With asiago cheese Cotes de Provence was almost mouth filling. It was round and balanced with good acidity. With Emmentaler Swiss wine is light, almost too light. It has been mastered with cheese.
Final verdict. I do not plan to buy this wine again. It is somewhat disappointing for the price. But it does come close. If you are organic wine in your decision may be different from mine.
